Cauliflower Fritters

Cauliflower fritters are cheesy, crispy, salty puffs of pure heaven. They’re a family favorite and we hover around the stove like vultures every time we smell them frying.

Yeah. Frying.

Which brings me to my next point: cauliflower fritters are not health food. They are not for the faint of heart. They are not for the weary. So put on your stretchy pants and join me, won’t you?

Here’s how they’re made:

First, find a nice cauliflower, cut it into small florets and boil it until tender.

While the cauliflower is cooking, mix together flour, lemon juice, eggs, chili powder, nutmeg and garlic.

When the cauliflower is done, drain it, chop it up some more, and add it to the flour mixture.

Then, add the cheese. Praise the Lord for Gruyere. Yum. Now put this delicious mixture in your favorite Tupperware, refrigerate it for at least 30 minutes and keep yourself busy. A watched cauliflower never cools.

You’re almost done. Heat up a pot of oil and deep fry heaping spoonfuls of the cauliflower mixture until golden brown and begging to be eaten.

Salt them immediately, squeeze on some lemon and  … enjoy!

Ingredients

  • 1 medium cauliflower, cut into small florets
  • 3 oz. all purpose flour
  • 2 large eggs
  • Juice of 1 lemon
  • 1 pinch chili powder
  • 1 pinch grated nutmeg
  • 1 clove of garlic, finely chopped (optional)
  • 4 oz. Gruyere cheese, grated
  • 4-5 c. canola oil, or enough to fill pan 1/3 full
  • Kosher salt

Instructions

  1. Bring pot of salted water to a rolling boil
  2. Add cauliflower florets and return water to a boil
  3. Cook over medium-low heat for 5 minutes
  4. Meanwhile, mix together flour, lemon juice, eggs and spices
  5. Drain cauliflower, roughly chop and add to flour mixture
  6. Add grated cheese and mix to combine
  7. Refrigerate mixture for at least 30 minutes to cool
  8. Fill saucepan 1/3 full with oil and heat to 350 degrees
  9. Drop heaping spoonfuls of cauliflower mixture into hot oil and fry for 4-5 minutes or until golden brown, turning as necessary
  10. Remove from oil and season with Kosher salt immediately
  11. Serve with a squeeze of lemon juice if desired
