Orzo Salad

I live alone. Not in a sad ‘I look at photos of babies dressed as flowers every night until I fall asleep’ kind of way. Just in a ‘when I make myself dinner, I usually have leftovers in the fridge‘ kind of way. As a result, I’m usually on the lookout for interesting ways to turn those leftovers into a something delicious. This is one of my favorite recipes that does just that.

All you need is orzo pasta (I love this stuff), olive oil, mayonnaise, some sort of orange champagne vinegar (I recommend the Orange Muscat Vinegar from Trader Joe’s), feta cheese, tomatoes, cucumbers, green onions, Italian parsley, fresh mint and leftover protein. Ok. That’s kind of a lot, but the good thing about this recipe is it’s totally adaptable. If you don’t have something, play around and try something else!

In the true spirit of leftover meals, this one is amazingly simple to make. Just cook your pasta according to the directions on the bag and put it in a bowl with the leftovers.

Chop up the cucumbers, tomatoes, green onions (camera-shy), parsley and mint and crumble the feta cheese. If you happen to live near a Trader Joe’s, buy the Israeli feta there. It’s the best. Ever.

Then add everything to the pasta and leftovers. Try to add it while the pasta is still warm so the cheese melts a bit.

In a separate bowl, whisk together the mayonnaise, vinegar and olive oil to make the dressing. Season it with salt and pepper to taste.

And pour it all over the salad.

Then, mix it all together. Try and resist the urge to dive headfirst into the bowl. Unless you live alone like me.

Top it off with extra feta cheese and enjoy!

Ingredients

  • Leftover fish, chicken, shrimp, tofu … whatever
  • 1/2 bag orzo pasta
  • 12 baby heirloom tomatoes (regular cherry tomatoes will work too), cut in half
  • 2 Persian cucumbers, skinned and diced
  • 6 green onions, chopped
  • 1 handful of Italian parsley leaves, chopped
  • 1 handful of fresh mint leaves, chopped
  • 4 oz. Israeli feta cheese, crumbled
  • 1/3 c. orange champagne vinegar
  • 3 tbsp. mayonnaise
  • 2/3 c. olive oil
  • Kosher salt
  • Freshly ground black pepper

Instructions

  1. Cook pasta according to the directions on the bag
  2. Put in large bowl with leftover fish, chicken, shrimp, tofu … whatever
  3. Add tomatoes, cucumbers, onions, parsley, mint and feta cheese to pasta
  4. In a separate bowl, whisk together vinegar and mayonnaise
  5. Slowly add olive oil, whisking as you go
  6. Season dressing with salt and pepper to taste
  7. Dress orzo salad and mix together
  8. Look at pictures of babies dressed as flowers until you fall asleep
